The Absolute Best Vegan Pizza Cheese

Plant based gooey pizza cheese can be yours! This perfect, nut-free vegan cheese is all you will ever want or need. No soy, no problem.


  • 1 liter coconut milk, full fat (I prefer the Aroy-d brand. Pre-mixed brands like Coconut Dream will not work with this recipe.)
  • 2/3 cup tapioca starch
  • 1 cup nutritional yeast
  • 3 bay leaves
  • 2 tsp pink salt
  • 1/2 cup white wine vinegar
  • 1/2 cup red onions, roasted


  1. Pre-heat oven to 400 F or 204 C.
  2. Dice small red onion, measuring 1/2 cup and put it on a sheet of aluminum foil. Sprinkle liberally with salt and put in the oven for 7 - 8 minutes, until browned. Remove and set aside.
  3. Whisk coconut milk on medium heat in a pot on the stovetop with bay leaves for 5 minutes.
  4. Remove bay leaves.
  5. Whisk in salt, vinegar and nutritional yeast.
  6. Remove the pot from heat.
  7. Take one cup of the liquid mixture plus the tapioca starch and hand blend the two in a side container. Add the roux to the original pot and hand blend until smooth. Add onions and hand blend again.
  8. Place your pot back on the heat and bring to a boil. Turn the heat down to low and simmer until the mixture is thick and difficult to stir.
  9. Put the cheese into a container to freeze. I like to use a large freezer safe plastic bag so it freezes into a vaguely tube-like shape.
  10. Once frozen, cut into thin slices and place on top of your pizza for baking. You can also grate the cheese while frozen, but do not use a food processor for this, you will destroy it.
  11. Enjoy pizza!


If trying for a lower FODmap vegan cheese, do not add in the red onion and add in an additional 1/2 teaspoon of salt.
