Vegan yeast-free gluten-free pizza

Delicious gluten free, low grain pizza that is super easy to make and store.

Ingredients:

  • 4 cups gluten free flour (I use Bob's Red Mill chickpea mix for mine)
  • 4 tbsp coconut sugar
  • 4 tsp xanthan gum
  • 3 tbsp baking powder
  • 1 3/4 cup full fat coconut milk (If you are using store bought nut milks or brands like Coconut Dream, you should do 3.5 cups of your 'milk' instead of the coconut milk and water. Note, that if they contain gums, your texture will be different from mine.)
  • 1 3/4 cup water
  • 1 tsp salt
  • 6 tbsp avocado oil
  • 6 tbsp aquafaba

Directions:

  1. Pre-heat oven to 400 fahrenheit/ 204 celsius.
  2. Combine dry ingredients in a bowl and set aside.
  3. Beat aquafaba until frothy and combine with wet ingredients.
  4. Add wet ingredients to dry ingredients and stir until smooth and combined.
  5. Cut parchment paper into a circle the size of your pizza pan.
  6. Using a spatula, spread about 1 cup/250 ml of the pizza dough onto the parchment into whatever shape you'd like. You can make your dough thin or thick, it's up to you.
  7. Bake for 15 minutes set aside to cool.
  8. Top with your favourite ingredients, fake cheese, real cheese, whatever your pizza loving heart desires.
  9. Return to oven and cook for an additional 15 minutes.

Notes:

While you do not need a hand mixer or stand mixer for this recipe, it's always so much easier to do if you have one.
